Curry is probably one of the most popular Indian foods in the world. There are so many variations and endless options. It is not hard to make and will keep you warm and cozy thanks to the spices.
Swede and coconut curry (chicken optional)

You will need:
1 medium size swede
1 onion
2tbsp curry paste (or make your own with tomato puree and curry powder)
1 tin of light coconut milk
130g spinach
1 lime
2 eggs
~400g chicken tights (optional)
oil, salt, pepper
Carefully peel the swede and cut up into wedges. Put them onto an oven tray, sprinkle some oil, salt and pepper and mix. Roast them in the oven for ~30-40 minutes.
If you'd like to add chicken to your curry, season the breast with paprika or something else earthy you would like. Fry on both sides for few minutes and then add to the oven tray.
Chop up the onion and fry it until clear. Add curry paste. If you are making your own, mix tomato puree with plenty of curry powder and a bit of olive oil.
Add the coconut milk and lime juice and bring it all to boil. Reduce the heat and add spinach. Cook for few minutes, taste and season.
Once the swede (and chicken) is cooked, add to the mix.
Serve with soft boiled eggs. Add rice, naan bread etc.
