This is another classic home cooked dinner - a granny specialty. Something I believe I have truly mastered in the kitchen by now as I don't have a granny who would make this anymore. Funnily tough, my mum always has an issue making this.. Well, she's not a granny so maybe that's the problem :D Anyway - enjoy!
Mince pork cutlet

You will need:
~ 500g minced pork
1 - 2 onions
1 egg
Favorite seasoning (such as garlic, paprika etc)
Wee bit of breadcrumbs
Salt and pepper
Oil
Chop your onions thinly, mix with the minced pork, egg and seasoning. Pick up the whole mixture and toss back into the bowl as hard as you can, do that couple of times (this ensures that the mixture stays together and makes it nice and airy).
Split the mixture evenly and shape into patties. Cover with breadcrumbs and fry over a medium heat on both sides. Sprinkle salt and pepper over them while cooking. Keep the heat medium to low, give them time to cook under a lid - don't rush, otherwise they will dry out.
Serve with anything you like such as mashed potatoes, salad, rice..
