Let's eat some veggies!

To make a great stir fry, you want to be fast when cooking and hot-hot-hot. It is fresh, crispy and oh so good for you. Make this to serve right away and if you love it as much as me, it's not hard to make again the next day!

 

Sweet chili stir fry

You will need:

2 chicken breasts

Mix of veggies such as peppers, spinach, broccoli etc

~70g egg noodles

Hearty amount of sweet chili sauce

Wee bit of soy sauce

Pepper

Oil (I recommend either peanut or stir fry oil for the taste)


Cut the chicken into smaller pieces and mix with plenty of sweet chili sauce. Cover, and let it set for at least an hour in a fridge.

Fry the chicken pieces and once nearly cooked, add the veggies to it. Mix well and cook for ~5 minutes. Meanwhile, cook the egg noodles according your package instructions. Once they are cooked, add them to the pan and mix well. Add some soy and sweet chili sauce to them. Give it a wee bit of a kick with freshly grounded pepper. Enjoy!


Best veggies for stir fry: ginger, garlic, mushrooms, carrots, sugar snap peas, broccoli, bell peppers, green onion, baby corn, bean sprouts
