Time to loosen your pants

Stew is a meal that will always fill your home with amazing smells and your belly so well that there's never need for dessert. It is super easy to make, you can get rid of veggies that are getting old and there's always plenty of leftovers for the next day. It is a healthy and a wonderful meal that will always make you feel warm and fuzzy. It's easy to flavor just the way you like it and fill with ingredients you prefer.

Here is a beef stew recipe that is always welcomed on my family's dinner table.

 

Beef stew with oven potatoes

You will need:

400g beef (choose the kind that has a marble of fat in it, otherwise it will dry out!)

3 carrots

3 onions

5 garlic gloves

~500 ml hot water

~400ml dark beer (John Smiths; Murphy's etc)

beef stock (I love using Knorr stock pot's)

Bay leaves

8 potatoes

Paprika, salt, pepper & any other potato seasoning you like

Oil

This amount of ingredients will make enough for 4 portions. If you wish to make more or less stew, just adjust the amounts.


Chop up your beef, carrots and onions into big chunks. Chop up your garlic and toss all of it into a big pot. Add oil and fry for few minutes. Add hot water and beer (I don't recommend using Guinness as it leaves quite a strong and bitter taste, use a smooth stout. My favorite is John Smiths.. but again, it all depends on your taste) Get it all to boil. Add beef stock and bay leaves. At the beginning there will be quite a lot of foam, try to remove as much as you can. Reduce the heat to medium and leave it to cook uncovered for ~1.5h. Stir it occasionally.

Prepare your potatoes. Peel them and chop them up. Mix them with the seasoning you wish to use, but for this meal I recommend using earthy tasting seasoning such as paprika. Add oil, salt and pepper, make sure they are mixed up well and put them into the oven 180 °C for about 30-45 minutes. Mix them occasionally.

By the time your stew has cooked 1.5 hours there shouldn't be much liquid left, but you want to still have some of it as you are making a stew.. there should be some yummy tasting liquid..

Sprinkle some green onions or fresh parsley over the plate and serve with a salad of your tasting.
