Yes, yes I know, I've posted many recipes containing chicken and/or pasta already, but I promise, this will become your family favorite from the first bite!
Chicken Parma
You will need:
300-400g chicken breast
~ 150g grated parmesan
wee bit of breadcrumbs
2 eggs
salt, sugar and pepper
herbs
800g (2 tins) chopped tomatoes
plenty of cheese (mild cheddar, mozzarella .. up to you)
oil

Slice the chicken breast midway through to make them into skinny steaks. Rub salt and pepper over them. Crack open your eggs in a bowl, mix breadcrumbs and parmesan together. Dip chicken into eggs and then into parmesan mixture and fry both sides until golden (don't need to be completely cooked through).
While the chicken cooks, put your tinned tomatoes into a pot (use fresh if in season) and let it boil for a few minutes. Add little bit of sugar to get rid of the sour, tin taste. Season with pepper and herbs (do not add salt as this will make it taste sour again!)
Put the chicken into an oven dish and cover with tomato sauce, sprinkle cheese all over and cook for ~15 minutes or until chicken is cooked. Serve with pasta.
