I take a lot of pride in my cooking, but I feel that often, I do not take many risks in the kitchen. I cook with ingredients I know well and love, and often cook food that's been served within my family for many generations. That's all great, but sometimes you just crave for something new and interesting. Never be afraid to step out of your comport zone and try something new. And who knows, you might find something so good that it will find a space in your dinner table quite often.
Fish cakes are something I have come to love and often order in a restaurant so I figured, it's about time to figure out how to make them. Turns out, it's super easy and oh-my-god how good!
Thai style fish cakes

You will need:
250-300g white fish
2 cloves of garlic
1tps ginger puree or a wee chunk of fresh ginger
1 stalk of lemongrass
3 spring onions
Wee bit of red chili flakes and some coriander seeds (feel free to use fresh stuff if you don't have the dried stuff at home)
3tps fish sauce
1 lime zest
1 egg
Wee bit of oil, salt & sugar
Sweet chili sauce
Rice, salad etc to serve with

Roughly chop up your garlic, ginger, lemongrass and spring onions. Toss them into a food processor (or use a hand blender). Add chili, coriander and some oil and puree them.
Chop up your fish. I used basa and crab meat, but you can use haddock, pollock or any other white fish. Add it to your puree with the fish sauce, lime zest, sugar & salt. Crack open your egg and whip it for a moment, add that to the rest. Mix it all up with the hand blender or in the food processor until it creates a nice mix with few chunks still left in it.
Put the mix into the fridge for ~10 minutes to cool down.
Heat up your pan with a hearty amount of oil on it.
With wet hands, scoop out a portion of your fish mix and make them into patties. I managed to get 5 patties, but it all depends on the size you'r making them into.
Fry them from both sides until golden brown. You can peak into one by making a small cut to check whether they're cooked through.
Serve with sweet chili sauce (I was lazy this time and bought if from the store.. maybe one day I will try to make it myself as well.. ) and whatever you fancy.

PS! If you want to serve them later, precook the patties in an oven. Just before serving, heat them up on a stove. This way you won't burn and dry them!
