I have always loved egg fried rice. I remember ages ago, when there was pretty much only one chain restaurant in Estonia selling Chinese food, my mum and I would always buy egg fried rice from there. I thought there was nothing better than that back then. To be honest, I still think it definitely is one of the best things when it comes to home made Chinese food, and luckily, you don't need to own fancy kitchen equipment or be a wise old man to make this meal. It is simple and just fantastic!
Egg fried rice with chicken

You will need: (the amounts vary depending your taste and how much you want to make. Add or leave out whatever you want, this is just how our household likes to make it!)
200g rice
Cooking or sesame oil
Wee bit of ginger and ground cumin
2-3 eggs
1 onion and some spring onion
2 carrots
wee bit of garlic, peas and broccoli
Soy sauce
~150g Chicken thighs or breast

Cook the rice and let it dry out wee bit once it's cook so it wouldn't turn to mush when mixing it with the rest.
Chop the onions, ginger and garlic. Grate carrots. Fry the chicken, season and set aside.
Toss your onion (not the spring onions), garlic and ginger on to the pan and cook until the onion is getting clear, add the rest of the veggies and season again. Once the veggies look like they are nearly done add the rice to the pan. Crack your eggs open and beat them, pour on top of the rice. Stir well and add some soy sauce. Cook until the eggs are cooked.
