Rolling, rolling, rolling down the..

Did you know that you only need 3 ingredients to make a delicious sponge? And then with just few add on's you can make that sponge into a delicious cake..

I like this cake as it's quite literally idiot proof and always turns out perfect. You don't need to worry about your sponge collapsing and cake being too dry. It's the kind of a cake that even I, who prefers making cakes to eating them, will go back for a second slice. It's easy to customize and will be a hit every time!

 

Rolled up sponge cake

You will need:

6 medium size eggs

6 tbsp flour

6 tbsp sugar

(see the system? just add or leave out parts if you want to make a smaller/bigger sponge)

Jam (Nothing too sweet. I used bramble jam, but cranberry or raspberry will do as well)

Water

200g cream cheese

100ml whipped cream

sugar

powdered sugar

marzipan

Crack your eggs into a bowl and start mixing with electrical mixer. You might want to put your headphones in and find a good album to listen to as you will need to mix your eggs about 15 minutes. From time to time, add sugar to the eggs. Once your eggs are light and fluffy, sieve flour onto them. With an open palm mix the flour in by lifting the mixture from bottom to top until the flour is all mixed in. Pour the mix onto a baking tray (I used a 35x25cm tray, if you are using much smaller/bigger tray adjust your amounts) and bake ~15-20 minutes at 200 °C until it's golden on top. DO NOT OPEN THE OVEN WHILE THE SPONGE IS COOKING!

Once the sponge is cooked, cut another piece of baking paper and put it on top of your sponge. Turn the sponge up side down and gently peel away the baking paper that was in the oven with your sponge. Turn the paper around and put it back on top of the sponge (the side that was against the sponge before is now away from it). Roll your sponge tightly between those two papers and set aside to cool down.

While the sponge is cooling, make your cream. Whip up your whipped cream with sugar. Once it's nice and strong, add cream cheese to it, taste and add more sugar if needed. Take a spoonful of your jam and mix it in a glass with little bit of warm water.

Once the sponge is cool, unroll it carefully and brush it with jam water. Spread jam all over the sponge and top it off with your cream mix (leave little bit for later). Carefully roll your sponge up again leaving space for the cream inside. Wrap it in paper and cling film and put it into the fridge for minimum 2 hours but it's best to let it sit over night.

Take the sponge out and spread a thin layer of leftover cream all over it.

Sprinkle powdered sugar over your work top and with the help of a rolling pin, roll your marzipan into big enough piece to cover your roll. (Don't worry about making it exact size and once it's over the sponge, just cut away leftovers) Cover your roll with marzipan, pat it down carefully and if you wish, decorate.
