Savoury muffins?! Well we know what the dearest Miranda Hart would say, but she hasn't tasted mine! Well, to be honest, she probably would still react like this, but I do promise, they are actually delicious. So how about you but Miranda on on Netflix and make up a batch of these bad boys. Perfect for breakfast! Make them the night before, cover them well with cling film and they will still be super fresh for the morning. Such fun!
Spinach and parmesan muffins

You will need:
120g flour
Half a tps baking powder
1 tps sugar
~30g spinach
wee bit of fresh basil
35g grated parmesan
120g soured cream
wee bit of olive oil
1 egg
Sift flour and baking powder together, add sugar and mix. Chop up your spinach and basil and add to the flour. Add 30g parmesan and mix well. Add soured cream, oil and the egg and stir until the mixture is well combined.
With the help of 2 spoons, spoon the mixture into muffin cups (leave them half empty). Sprinkle the rest of the parmesan on top of them. Bake in a preheated oven 200°C for ~15 minutes.
