What's better than a patch of freshly baked cookies and your home smelling of sugar and butter? Cookies are so simple to make and quite often let's you use up bits and pieces lying around the kitchen.. Also, they take barely any time and skill to make.
Simple cookies with chocolate and toffee
You will need:
150g salted butter
80g brown sugar
80g white sugar
Wee bit of vanilla extract and salt
1 egg
225g flour
Half a teaspoon of baking soda
Whatever you want to put inside.. I had some chocolate and toffee chunks lying around so just used those up.
With a hand mixer, mix butter and sugars together until the mixture is turning light in colour and creamy. Add vanilla and an egg, mix well.
Sift flour and soda through a sieve on top of the mixture. Add a bit of salt (always add some to sweets, it helps to bring out the flavors!). Mix with a spatula or a spoon or whatever you like to use in your kitchen. Add your chocolate or whatever you are using and mix all together.
With the help of two spoons, scrape up wee scoops of dough and place them on a baking tray. Leave plenty of space in between as they will melt down into a.. cookie shape.
Cook for about 10 minutes or until they are light brown and slightly soft to the touch in a 200°C oven. Let them cool down, they will harden up.
